Pad Thai
Okay friends, so I’ve been making this dish since college, when my new town didn’t have a Thai restaurant anywhere near my dorm. It was unbearable, so I came up with my own rendition. Hope you enjoy it as much as my family does.
Ingredients:
One box of “Pad Thai for 2” (if you don’t want it to be too dry, pick up an extra sauce👇!)
Pad Thai sauce (I use Thai kitchen)
I lb chicken breast, shrimp, or steak (I use 1 pack of Publix’s, Greenwise, raw chicken tenders)
Shelled, frozen edamame (I use seapoint farms)
Cashews (pieces & halves)
Baby bell peppers (sliced)
Green onion (chopped)
Fresh cilantro (chopped)
Chipotle peppers in adobo sauce (GO EASY!! A little flavor is needed, but too much will ruin it 🔥, I normally slice about 3, no seeds, & drizzle in a tiny bit of the sauce)
Limes
Canola oil
Sesame oil
Garlic powder
Salt
Pepper
Personally, I like bean sprouts & shredded carrot, but I don’t normally include it since my fam is picky. I do add some hot pepper to my bowl for a little extra heat though 🔥
Directions:
I never keep track of exactly how much of everything I put in, but it always comes out good, & you can mess with the ingredients to get it the way you like it 😉
Start by popping the noodles in cold water, like box directs
Slice or chop chicken & season with salt, pepper & garlic powder
Heat a little canola & sesame oil in wok or sauté pan & add sliced or chopped chicken
Sauté the chicken on medium/high heat until it’s cooked through, drain & add most of the sauce packet from box to chicken
Sauté briefly, whatever veggies you’re using
Push veggies to one side & cook the egg on other, stirring occasionally.
Put chicken & veggie/egg mixture together in wok & add noodles
Add the rest of sauce packet & then pour in additional sauce to your liking
Cook on medium/high heat till noodles soften & toss in edamame, green onion, cilantro, cashews, crushed red pepper flakes (if desired), & squeeze in some fresh lime juice
Serve warm & top with extra green onion, cilantro, cashews, & lime wedges. Pair it with Scout & Cellar’s L’Original Rosè (get it here).
