Blueberry Cream Cheese Pastry

Remember when I posted about my tragic grocery shopping trip the other day? Yeah, well apparently I was so distracted by the chaos in & around my cart that I forgot to pick up breakfast food πŸ€¦πŸ»β€β™€οΈ 

Fast forward to Saturday morning, & my family was looking at me to feed them πŸ™„ I would like to thank my fridge & pantry’s random stash, as well as my amazing brain πŸ€ͺfor this deliciousness. I may add a little honey to the filling mix next time, give it a try & let me know how it is.

Blueberry Cream Cheese Pastries πŸ₯

(Makes 4 pastries)

Ingredients: 

1/2 cup powder sugar 

1 8oz block of cream cheese, softened 

1/2 tsp vanilla extract 

I egg white

1 roll of crescent rolls (I used Annie’s Organic, but you can use any brand) 

Parchment paper

Blueberries 

Directions:

  1. Set oven to whatever your crescent roll package calls for. I did 350 for Annie’s 

  2. Beat cream cheese, powdered sugar, & vanilla extract in small bowl 

  3. Pull off two crescent triangles at a time, making sure to keep them together & lay on parchment paper on baking sheet

  4. Pinch seems of two triangles together & flatten so they become one (a pack of 8 will make 4 pastries)

  5. Use a small frosting spatula to cover each pastry entirely (you’ll have leftover filling)

  6. Push as many blueberries as you desire into top of filling 

  7. Pull two corners of crescent roll in to meet each other 

  8. Brush egg white over top & sides of crescent 

  9. Set in middle tack of oven & cool for 12-15 mins or golden brown. Turn pan around in oven half way through to make sure it bakes evenly! 

  10. Sprinkle with additional powdered sugar & serve warm πŸ˜‹
